Cupcake Base
• Place the ingredients in the mixing bowl and blend together for 1 minute on low speed using the paddle attachment.
• Scrape down bowl and mix for an additional 4 minutes on medium speed.
• Scaling: 40-45 grams standard cupcake size.
• Bake Temperature: 165°C (329°F).
• Bake Time: 30-35 minutes.
• Internal core temperature 99°C (210°F).
• Allow to cool completely before filling and topping.
Filling
• With the use of a pastry bag fitted with an injection tip, fill the cupcakes with 15 grams of Cremfil Mango.
Topping
• Mix the desired amount of colour and flavour into the ready-to-use icing.
• Using a pastry bag and round tip, frost each cupcake.
• Top with toasted coconut.
