Indulge without the guilt - Consumers want to live healthy but without having to give up on indulging.  In this session, we focus on different creative sweet good recipes that are tasty and healthy at the same time.

Healthy Breads: Taste, freshness and health are the top 3 criteria when consumers buy bread. Working with power ingredients such as grains and sourdough allows you to respond to todays’ consumer needs. In this session, we will focus on multigrain breads and how to you can integrate grains & seeds in your breads.

Breads of the World: Inspire your customers with breads from around the world! Breads from Portugal, France and Mexico, each of them significant and unique in their own way. We will inspire you with recipes from around the world including story-telling and tips and tricks on how to make them.

Texture in Patisserie: Today’s consumers are looking for taste experiences; working with different textures within your sweet goods allow you to bring new ideas and innovation to your portfolio. In this session, you will learn about different techniques of bringing texture into your recipes.

Seasonal Sweet Dough: Discover seasonal sweet good recipes ranging from Valentine’s Day, Easter, Halloween and year-end holidays.  In this session we will work with different type of dough as basis such as laminated doughs and sweet doughs to help bring out the season.

Sourdough: Back by popular demand.  The last year sessions were such a success that we are running it again in 2020!  You will learn everything about sourdough and be inspired with different artisan-style bread recipes.

Chocolate Demos: Everybody loves chocolate and it’s a popular ingredient to incorporate in baked goods. During this Academy, we will share tips and tricks on how to work with real Belgian Chocolate organized by our international chocolatier masters.
